Let me start by welcoming you to RPG.
Character Sheets are a topic of debate for many role-players. Some, like myself, find them tedious. However, you'll be quick to find that they are a useful reference tool, particularly in long-term roleplays. There are two kinds of roleplays here: tab and thread
Tab roleplays have multiple tabs, like mine here. (Shameless advertising!) These roleplays tend to be more geared towards multiple players, have a GM and often require an acception process of characters. You fill out the sheets and apply to be a member of the roleplay. Often the GMs will provide a character sheet of their own design that you fill out and submit, ignoring the predesigned one. Characters, once created, are saved to your account and can be reused later for other roleplays.
Thread roleplays take place in a thread, like this one here, and are probably the kind you're used to. These are generally used by a select few and do not require a character sheet. If you're opposed to them, this might be the kind of place you'd prefer.
